Miss Sue’s Meatloaf
Meatloaf:
2 lbs ground chuck 1 egg lightly beaten
1 medium onion ½ cup uncooked oats
1 bell pepper, chopped 1 Tbsp basil
1 Tbsp Worstershire sauce 1 Tbsp thyme
2 tsp soy sauce 1 Tbsp oregano
½ cup catsup 1 tsp sugar
¼ cup Cuzzy’s Cajun Sauce 1 tsp Tone’s Cajun spice
Dash Tabasco Sauce 1 tsp salt
1 cup milk 1 tsp black pepper
Sauce:
1 Tbsp Cuzzy’s Cajun Sauce 6 oz can tomato paste
Mix all ingredients by hand until thoroughly combined. Place in a round oven proof casserole dish that has been sprayed with non-stick spray. Shape into a ring, leaving the center of ring open. Top with sauce. Bake covered at 350 degrees for 30 minutes. Remove cover and continue baking until done. (about 10 minutes)
