Cuzzy’s Pork Medallions
½ tsp salt 2 tsp toasted fennel seed
½ tsp black pepper 12 slices thin bacon
2 pork tenderloins
Trim excess fat from the tenderloins. Cut into 2 inch medallions, and wrap with bacon. Secure with a toothpick. Season each piece with salt, pepper and toasted fennel seed. Grill over medium heat 14 to 18 minutes, turning once, until bacon is fully cooked. Serve hot with Cuzzy’s Key West Sauces.
