Gator a’la Cuzzy
2 lbs gator tail, cut flour
into bite size pieces corn meal
salt and pepper oil for frying
Marinade:
1 Tbsp Cuzzy’s Special Sauce 2 Tbsp olive oil
1 Tbsp Baking soda 1 clove garlic, minced
2 cups red wine ½ tsp thyme
3 Tbsp red wine vinegar
Salt and pepper gator tail. Place in marinade in glass bowl and refrigerate overnight. Remove from marinade and pat dry with paper towels. Coat with a ½ and ½ mixture of flour and corn meal. Deep fry in 375* oil until golden brown. Serve hot with Cuzzy’s Special Sauce and Cuzzy’s Cajun Sauce.
